  • What makes UMAI’s udon artisanal — and what's the hype around it?
    Udon’s usually an afterthought. Not here! We’re the first udon bar in Singapore to serve 4 types of udon noodles under one roof — Sanuki, Himokawa, Hippari, and Hoto. Each style comes from a different region of Japan, and we serve them up with a modern fusion twist. If you’ve ever queued for chewy Sanuki in Tokyo or slurped silky Himokawa in Gunma, you’ll know what we mean. These noodles aren’t like your average wheat noodles — they’re hand-stretched, thick, springy, and unapologetically satisfying.
  • What are the different types of udon at UMAI, and what’s the crowd fav?
    We’ve got four udon profiles Here’s the cheat sheet: Sanuki: Thick, bouncy, iconic — our go-to for stir-fries and cold bowls Himokawa: Paper-thin and wide — but don’t mistake it for Chinese-style flat noodles. These have a higher wheat-to-water ratio, which means they’re less springy, more doughy, and have a satisfying bite that feels almost chewy-soft. It’s not your slippery hotpot noodle! Hippari: Long and rustic — built for the slurp. Also known as drag noodles, these have a satisfyingly chewy bite and just the right amount of grip to hold onto broth, tare, or sauce. They're a little wild, a little messy — and that’s exactly the point. Hoto: Thick, flat, and unapologetically chewy — it’s like ban mian on steroids. If you’re the type who loves a bold, hearty noodle you can really bite into, Hoto’s your soulmate in a bowl. It’s rustic, comforting, and low-key addictive. The "hot" favourite would be the Cold Sanuki options. It’s Singapore! Not forgetting our Miso Carbonara with black pork belly - That’s the viral one. You’ve probably seen it on TikTok.
  • Is UMAI worth the queue — and should I book?
    If you know, you know. UMAI has limited seating, and our regulars always book online (you can do it from our site or link in bio). But in case you're walking in, we’ll definitely have space for you — plus there’s free alfresco seating nearby if we’re full. Wait times vary during peak hours, but good udon doesn’t rush. Grab a $10 highball while you wait — we serve them all day.
  • What are the must-try dishes at UMAI?
    Start with the Miso Carbonara — creamy, salty, umami-loaded with that ridiculous slab of melt-in-your-mouth black pork. Then go for a stir-fried or cold Sanuki depending on your mood! If you're looking for indulgence, get the Prawn Hibachi Hippari noodles, its literally out of this world - it's like a hug in a bowl. Well, we'd say to eat your way through the menu, so bring friends and share!
